說到白茶，便有人常言：
「一年茶三年藥七年寶」

「一年茶」說的是當年新白茶。
「三年藥」存放了三四年的白茶，茶性已經悄悄轉化。
「七年寶」白茶存放至六七年，就已算是老白茶了。
老白茶香氣有清甜花香，仔細聞有陳香出現，偶有棗香，甚至發展成為一種舒適的「藥香」。
好的陳年白茶湯色如琥珀，其滋味變得醇厚飽滿，入口也更加順滑，甜度、稠度也會逐漸增加。
白茶芽頭細小，茶梗幼細，茶乾深褐、深綠、淺黑，表面佈滿白毫，毫香氣息重。
白茶富含氨基酸複合物，可以保護神經細胞，清熱解毒，生津止渴，提神醒腦，又稱「美白茶」，茶胺酸高，能抗氧化。

自然農法極品白毛猴
這款茶置茶量可少，大約1:30，有別以往的1:20，水溫100度，每泡浸泡時間為1分鐘，數泡之後依個人口味做調整，
所以正常一次大概只要四克到五克即可4-5人飲用。
自然農法極品白毛猴茶香入水，花香中帶果香，還多了一味蜜香，比起小白茶茶水更甜，從頭甜到尾，沖泡的整個過程多變，
隨著沖泡次數的增加，茶底色慢慢變深，茶黃素轉茶紅素，成發酵度越來越高的茶湯色。
